Bouboulina, a novel full-service American grill with influences from Mediterranean cuisine, is set to occupy 3,080 square feet on the street level of 915 Meeting. Founded by the creators of CAVA, namely Ted Xenohristos, Dimitri Moshovitis, and Ike Grigoropoulos, this restaurant will showcase a wood-fired grill, premium steak cuts, fresh seafood, and house-baked bread with a Mediterranean touch, reflecting the founders’ heritage and roots. Construction is scheduled to commence in winter 2024.
Notably, this marks the trio’s third restaurant at Pike & Rose, adding to their array of popular and award-winning dining establishments in the area. Bouboulina joins Melina, opened in 2021, and Julii, the French Mediterranean concept launched in 2018. The founders, also co-founders of the publicly held Mediterranean fast-casual concept CAVA, pay homage to Bouboulina, the historic figure who became the first woman Admiral during the Greek War of Independence, by naming their new restaurant after her.
