Kajiken, a restaurant specializing in “soupless ramen,” is set to join The Shops at Congressional Village shopping center on Rockville Pike in Rockville in the near future.
Originating in Japan in 2010, Kajiken has rapidly expanded its footprint globally, boasting 100 stores worldwide by 2022. The restaurant recently made its debut in the United States with its first location in nearby Baltimore in August of the same year.
Kajiken offers mazesoba, also known as abura soba, which is a unique brothless ramen dish that allows patrons to customize their flavor profiles with various add-ons and sauce combinations. In addition to the signature abura soba, the menu features classic ramen with a traditional broth base, as well as donburi, a delectable combination of a small portion of meat served atop a bed of rice. Guests can indulge in a range of flavor options, from authentic Japanese varieties to inventive twists like carbonara-infused ramen.
